Spiced Apple Crisp

So those apples at the farmer’s market or big box store were calling your name and now you aren’t sure what to do with all of them? Simply whip up a delicious apple crisp that’s sweetened with monk fruit instead of sugar. It’s the perfect go-to dessert for family or potluck gatherings with sugar-conscious eaters in the midst.

Ingredients
For the filling:
4 green apples, peeled, cored, and sliced into ½-inch-thick slices
2 tablespoons cornstarch
1 teaspoon fresh lemon juice
1 teaspoon cinnamon
½ teaspoon ground nutmeg
½ teaspoon salt
For topping:
¾ cup vegan butter, cut into cubes
1 cup flour
½ teaspoon salt
1 tablespoon cinnamon
Directions
  1. Preheat oven to 350 degrees. For the filling, into an 8 x 8-inch pan, add all ingredients including ⅓ cup NOW Monk Fruit Sweetener and toss to combine.
  2. For the topping, into another bowl, add all ingredients including 1 cup NOW Monk Fruit Sweetener. Combine using a fork, until crumbly. Add topping to pan.
  3. Bake 30 minutes. Let cool for 10 minutes before serving.
