Red Thai Noodle Soup

Great for a post-workout meal, this protein-packed Red Thai Noodle Soup created by #NOWAmbassador Joe Nardella features chicken bone broth protein powder for added recovery support.

Ingredients
2 pounds chicken breast, cooked and diced
salt and pepper to taste
3 cloves garlic, minced
2-3 red bell peppers, diced
1 whole onion, diced
2 tablespoons red curry paste
1 tablespoon grated ginger
1 can full-fat coconut milk
or rice noodles of your choice, cooked
1 tablespoon fish sauce
6-8 cups bone broth

Toppings:
green onion
fresh basil
limes
Directions
  1. Heat oil in a Dutch oven.
  2. Add garlic, bell peppers, and onion. Cook until tender.
  3. Stir in red curry paste and ginger until fragrant.
  4. Add broth, protein powder and coconut milk.
  5. Stir in chicken.
  6. Add fish sauce.
  7. Simmer for 10 - 15 minutes.
  8. Serve over noodles (cook and store the noodles separately because gluten-free noodles tend to absorb a ton of broth).
  9. Top with green onions, cilantro, basil, and lime juice.
