Pumpkin Pie Protein Oats

These overnight oats that are perfect for Fall, are also so delicious, healthy and VERY easy to make. The key is to mix all the ingredients the night before for the best texture. You simply just put it all in a container with a lid and enjoy in the morning! This recipe has been brought to you by Monica Nelson of Moni Meals.

Ingredients
½ cup organic pumpkin purée
½ cup unsweetened almond or coconut milk
1 teaspooon pumpkin pie spice
1 dash cinnamon for topping
optional toppings apples, chia seeds, dried figs, bananas, nuts
Directions
  1. Combine all ingredients in a container with a lid.
  2. Leave in the refrigerator overnight.
  3. Enjoy the next morning! Eat cold or warm up in the microwave for a few minutes.
  4. Add any other toppings you’d like.
