Fresh Pesto Cod – a quick and easy entree that takes less than 20 minutes from start to finish. Pair this 5-ingredient pesto with wild cod (or any flaky white fish) for a simple entree that's beautiful and packed with nutritious flavor.

basil leaves
¼ cup
Pine Nuts, Raw Organic
¼ cup
parmigiano-reggiano cheese, freshly grated

clove garlic
⅛ teaspoon
salt
¼ teaspoon
black pepper

cod fillets (4 oz. each)
Directions
- Preheat oven to 300° F.
- In a food processor, combine basil, pine nuts, parmesan cheese, garlic, salt, and pepper.
- Drizzle in Avocado Oil until fully incorporated.
- Place each cod fillet with 2 tablespoons of pesto in an even layer.
- Place onto a baking sheet with pesto side up and bake in preheated oven for 15 minutes.
- Serve warm and enjoy!
