Turmeric Ginger Moroccan Rice

Rinse rice under cool water a few times until water runs clear. Bring a saucepan to a boil over medium heat. Turn heat off and add Turmeric Ginger tea bags. Steep for 5 minutes. Discard tea bags.

Add rinsed rice to tea and bring to a boil. Reduce heat to simmer. Stir simmer for 15 minutes uncovered, until rice is tender. Fluff rice with a fork and cover to keep warm.

Heat olive oil over medium heat in a large skillet. Add onion and sauté for 5 minutes. Add garlic and sauté for 1 minute longer.

Stir in cooked rice and apricots. Season with salt. Cook for 2 minutes longer.

Serve rice hot topped with pistachios and cilantro.
