Virgin Coconut Cooking Oil, Organic
1 cup
chopped yellow onion
1 cup
sliced bell peppers
1 cup
cut baby corn
1 teaspoon
minced garlic
1 teaspoon
minced ginger
8 ounces
extra firm tofu, cubed
1-2 tablespoons
red curry paste
⅔ cup
low sodium chicken stock
4 tablespoons
Oat Milk Powder, Organic
⅔ cup
filtered water
¼ cup
creamy peanut butter
Salt to taste

Directions
- Whisk together oat milk powder and water until smooth and creamy. Set aside.
- Heat coconut oil over medium heat in a large skillet. Add onions and bell peppers. Sauté for 5 minutes, stirring occasionally. Add garlic and ginger. Cook 1 minute longer.
- Stir in tofu and desired amount of curry paste based on spiciness preference. Add chicken stock and oat milk. Reduce heat to medium-low.
- Stir in baby corn and salt to taste. Simmer for 5 minutes.
- Stir in peanut butter until combined. Serve over rice garnished with basil, lime wedges and chopped peanuts.
