Ingredients
For Curry
1 cup chopped yellow onion
1 cup sliced bell peppers
1 cup cut baby corn
1 teaspoon minced garlic
1 teaspoon minced ginger
8 ounces extra firm tofu, cubed
1-2 tablespoons red curry paste
⅔ cup low sodium chicken stock
⅔ cup filtered water
¼ cup creamy peanut butter
Salt to taste

Lime wedges
Fresh basil

Directions
  1. Whisk together oat milk powder and water until smooth and creamy. Set aside.
  2. Heat coconut oil over medium heat in a large skillet. Add onions and bell peppers. Sauté for 5 minutes, stirring occasionally. Add garlic and ginger. Cook 1 minute longer.
  3. Stir in tofu and desired amount of curry paste based on spiciness preference. Add chicken stock and oat milk. Reduce heat to medium-low.
  4. Stir in baby corn and salt to taste. Simmer for 5 minutes.
  5. Stir in peanut butter until combined. Serve over rice garnished with basil, lime wedges and chopped peanuts.
