Stuffing-topped Baked Mac & Cheese

Can’t decide between the all-time greatest sides of stuffing or macaroni and cheese? Make both! This vegan mac and cheese tastes just as good the next day. Simply bake at 375 for 10 minutes. Ingredients
FOR THE STUFFING TOPPING:

½ inch cubed sourdough bread

freshly chopped sage
1 tablespoon
freshly chopped rosemary
1 tablespoon
freshly chopped thyme
¼ teaspoon
salt
¼ teaspoon
black pepper

vegan butter

shallot, chopped
¾ cup
celery, chopped
½ cup
vegetable broth
FOR THE MAC AND CHEESE:
½ cup
vegan butter
¼ cup
all-purpose flour
2 cups
unsweetened oat milk
1 tablespoon
Dijon mustard
1 cup
nutritional yeast
1 teaspoon
onion powder
1 teaspoon
garlic powder
1 teaspoon
paprika
2 teaspoons
salt, divided
1 teaspoon
black pepper
Directions
For the stuffing topping:
- Preheat oven to 375 degrees. In a large bowl, toss bread, sage, rosemary, thyme, salt, and pepper. Spread onto a baking sheet and bake 8 minutes until lightly toasted. Remove from oven.
- In a sauté pan over medium heat, warm ¼ cup butter. Add shallots and celery, and sauté 3 minutes. Add toasted bread and vegetable broth and mix to combine. Remove from heat and set aside.
For the mac and cheese:
- Into a medium pot over medium-high heat, warm ½ cup butter. Slowly whisk in flour until smooth. Add milk and bring to a slight boil, stirring often. Turn off heat. Add mustard, nutritional yeast, onion powder, garlic powder, paprika, 1 teaspoon salt, and pepper. Mix until combined. Cover and set aside.
- In a large pot, add 10 cups water and 1 teaspoon salt. Bring water to a boil. Add pasta and cook, uncovered, stirring occasionally, for 6 minutes.
- Drain pasta and add to cheese sauce. Mix to combine. Transfer to a 9 x 9 inch baking dish, and top with stuffing.
- Bake at 375 degrees for 15 minutes, or until stuffing is golden brown. The mac and cheese can be served hot or slightly cooled.
