Rainbow Thai Salad with Sesame Vinaigrette

Taste the rainbow with veggies of all colors in this super salad featuring a sumptuous sesame vinaigrette. The vinaigrette featuring our high-quality organic sesame seed oil is what gives this salad its rich flavor. Simply combine all your favorite colorful veggies, like the ones suggested below, toss with the vinaigrette, and you are good to go!

Ingredients
For the salad:
1 cup shredded carrots
1 cup shredded purple cabbage
1 cup shredded green cabbage
3 small red bell peppers, julienned
3 small yellow bell peppers, julienned
¼ cup chopped green onion
¼ cup chopped cilantro
For the sesame vinaigrette:
2 tablespoons soy sauce
1 teaspoon rice wine vinegar
2 teaspoons lime juice
1 teaspoon minced fresh ginger
¼ cup chopped peanuts
Directions
  1. For the salad, in a large bowl, place all ingredients and toss until combined.
  2. For the sesame vinaigrette, in a small bowl, whisk together oil, soy sauce, vinegar, lime juice, ginger, and coconut sugar.
  3. Add sesame vinaigrette to vegetables and toss to combine. Serve with sesame seeds and chopped peanuts.
