Peanut Butter Swirl Brownies

Looking for a dairy and egg free brownie recipe? These delish brownies get a last minute peanut butter dollop swirl to make them all the more decadent, so you will never notice the absence of diary or eggs. This recipe also features monk fruit as an alternative sweetener to sugar to make it that much healthier and nourishing.

Ingredients
¾ cup all-purpose flour
½ teaspoon baking powder
¼ teaspoon cinnamon
½ teaspoon salt
½ cup vegan chocolate chips
½ cup vegetable oil
⅔ cup unsweetened oat milk
2 teaspoons vanilla extract
¼ cup creamy peanut butter
Directions
  1. Preheat oven to 350 and grease an 8 x 8-inch pan. In a bowl, whisk together NOW Real Food Organic Monk Fruit Sweetener, flour, cocoa powder, baking powder, cinnamon, and salt. Set aside.
  2. In a microwave-safe bowl, add chocolate chips and oil. Microwave in 30-second intervals, stirring between each interval until melted and completely smooth.
  3. In a separate bowl, combine oat milk and vanilla. Microwave for 30 seconds. Add to melted chocolate and mix to combine. Add dry ingredients and mix until smooth. Spread evenly into prepared pan. 
  4. Add 6 dollops of peanut butter on top of brownie mixture and swirl with a butter knife. Bake 16 to 18 minutes. Let cool 30 minutes before serving.
