For Chicken
2 tablespoons
Avocado Cooking Oil, Organic in Glass Bottle
1 pound
chicken breast, cubed
1 teaspoon
smoked paprika
¼ teaspoon
salt

For Mushroom Quinoa
2 tablespoons
butter
4 ounces
sliced cremini mushrooms
1 teaspoon
minced garlic
2 cups
chicken stock
2 teaspoon
Italian seasoning
½ teaspoon
salt
½ teaspoon
black pepper
1 tablespoon
chopped parsley
Directions

Heat avocado oil in a large Dutch oven or heavy skillet over medium heat for 2 minutes.

While oil heats, stir together chicken, smoked paprika, and salt.

Spread chicken in skillet and brown for 6 minutes, stirring regularly to evenly brown. Melt butter in skillet. Add mushrooms and cook 3 minutes. Add garlic and cook 30 seconds longer.

Stir in quinoa and cook 1 minute to lightly toast. Reduce heat to medium-low. Stir in chicken stock, Italian seasoning, salt, and pepper. Cover and cook 15 minutes, or until quinoa is tender.

Remove lid and cook 5 minutes longer, until most of the liquid has evaporated.

Serve hot garnished with fresh parsley.
