Healthy Sweet-and-Sour Chicken with Organic Quinoa

Sweet-and-sour chicken is an Asian-American favorite, but the typical preparation isn’t the healthiest option. Our chefs knew they could do better, and this Healthy Sweet-and-Sour Chicken with Organic Quinoa is the fruit of their labor.

Ingredients
2 dried chili
2 tablespoons chopped ginger
1 tablespoon chopped garlic
2 red peppers, small dice
1 cup fresh diced tomatoes
4 celery ribs, diagonally sliced
1 onion, small dice
1 teaspoon sea salt
1 pound skinless, boneless chicken breast, ½ inch cubed
½ cup water
2 tablespoons acai liquid
½ tablespoon coarse black pepper
½ cup chopped cilantro
Directions
  1. Place wok/sauté pan on medium high heat, add 2 tablespoon extra virgin olive oil.
  2. Add 2 dried chilis, ginger, and garlic, and cook for 1 minute.
  3. Add peppers, tomatoes, celery rib, onion, and salt. Stir constantly.
  4. After 2 minutes add chicken and stir.
  5. After 2 more minutes add ½ cup of water, 2 teaspoons acai liquid, 1 teaspoon lemon extract, and cook on medium-low heat for 5 minutes.
  6. Sprinkle ½ tablespoon of black pepper and cook until only 1/3 cup of liquid remains.
  7. Place over cooked quinoa, sprinkle 2 tablespoons chopped cilantro, and serve.
