Gluten Free Triple Coconut Chicken Tenders

Chicken tenders are a quick-and-easy go-to for busy families, but like many foods we eat often they can get old pretty quickly. We’re taking plain old chicken tenders to another level with a triple coconut combination of organic coconut flour, organic shredded coconut, and our Organic Virgin Coconut Oil. The fresh taste and extra crunchy texture will wake up even the most tired taste buds!

Ingredients
¼ cup Gluten-Free Flour
2 eggs
1 tablespoon milk
½ cup gluten-free breadcrumbs
1 pound chicken breast, sliced
Directions
  1. Preheat oven to 400° F and line a cookie sheet with parchment paper.
  2. In a bowl, combine gluten-free flour, organic coconut flour, and salt.
  3. In a separate bowl, whisk together eggs and milk.
  4. In a separate bowl, combine shredded coconut and gluten free breadcrumbs.
  5. Dredge chicken pieces in gluten free all-purpose flour and coconut flour mixture, dip in egg and milk mixture, then coat with shredded coconut and gluten free breadcrumbs.
  6. Place coated chicken pieces on prepared cookie sheet.
  7. Drizzle chicken pieces with virgin organic coconut oil.
  8. Place in oven and bake for 8 minutes.
  9. Remove from oven, flip each chicken tender, then return to oven and bake another 7-9 minutes, until crisp and golden brown.
  10. Serve warm with your favorite dipping sauce.
