This Rice Bran Banana Nut Bread is a gluten-free treat, perfect for anyone seeking a fiber-rich snack. It blends NOW Real Food® Organic Almond Flour with rice bran and tapioca flour, creating a moist, flavorful loaf speckled with organic pecans and sweetened naturally with ripe bananas and maple syrup. Ingredients
1 teaspoon cinnamon
1 teaspoon baking powder
½ teaspoon salt
1 cup mashed ripe bananas
2 large eggs
1 teaspoon vanilla extract
Directions
  1. Preheat oven to 350ºF and line a loaf pan with parchment paper overlapping sides. In a large mixing bowl, whisk together almond flour, tapioca flour, rice bran, cinnamon, baking powder and salt.

  2. In a separate mixing bowl, whisk together mashed banana, eggs, olive oil, maple syrup and vanilla extract.

  3. Stir wet ingredients into dry until just combined. Fold in pecans.

  4. Pour into prepared pan and bake for 1 hour or until toothpick inserted into bread comes out clean.

  5. Cool bread at room temperature for 30 minutes. Remove from pan lifting parchment paper and cool 30 minutes longer. Slice and serve.
