2 (14-ounce)
cans hearts of palm, drained and chopped
⅓ cup
chopped grapefruit
1 ½ cups
cherry tomatoes, halved
¼ cup
red onion, thinly sliced

avocado, cubed
Tortilla chips, for serving
Directions

Into a large bowl, add avocado oil, garlic, lemon juice, grapefruit juice, lime juice, lime zest, cilantro, maple syrup, coriander, cumin, salt, and pepper. Whisk to combine.

Add hearts of palm, chopped grapefruit, cherry tomatoes, red onion, jalapeño, and avocado. Toss gently to combine. Serve immediately with tortilla chips or refrigerate for a few hours to marinate before serving.
