This nutritious salad features roasted Brussels sprouts tossed with dried cherries, crunchy NOW Real Food® Raw Pecans, and a sprinkle of parmesan, all brought together with a homemade dressing using Ellyndale Organics Unrefined Avocado Oil and NOW Real Food® Maple Syrup. Quick to prepare and packed with flavor, this warm salad is an excellent way to enjoy brussels sprouts in a new, enticing way.

Ingredients
4 cups sliced brussels sprouts
⅓ cup dried cherries or cranberries
¼ cup freshly grated Parmesan cheese

For Dressing
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
½ teaspoon dried thyme
½ teaspoon salt
Directions
  1. Preheat oven to 400ºF and line a baking sheet with parchment paper. Spread brussels sprouts on baking sheet and drizzle with avocado oil. Toss to combine. Bake for 12 minutes. Cool on baking sheet for 5 minutes.

  2. Stir together ingredients for dressing in a small bowl.

  3. Transfer brussels sprouts to a mixing bowl and add cherries, pecans, and Parmesan cheese. Drizzle with dressing and stir to coat.

  4. Transfer salad to a serving platter and enjoy warm.
