Asian Crunch Buddha Bowl

Spice up your everyday chicken and rice recipe by adding some crunch and sesame oil for a taste sensation you’re sure to love. The homemade dressing using our Ellyndale® Organics Sesame Oil gives the typical protein and rice combination a punch while the peanuts and cabbage add a crunchy fun twist. This Meal Prep on Fleek™ recipe is great for lunch meal prep but also works for dinners in a pinch as well.

Ingredients
For salad:
6 cups Napa cabbage, shredded
2 cups brown rice, cooked and chilled
8 ounces chicken breast, cooked, shredded, and chilled
½ medium sized red bell pepper, julienned
⅓ cup cilantro, chopped
¼ cup roasted salted peanuts, chopped
For dressing:
3 tablespoons rice vinegar
3 tablespoons coconut aminos
2 tablespoons creamy unsalted peanut butter
Directions
  1. Combine ingredients for dressing in a small bowl and whisk until smooth. Divide between four small dressing cups.
  2. Divide cabbage, brown rice, chicken, bell peppers, cilantro, and chopped peanuts between four meal prep salad containers. Secure lids and place dressing cups in the center of lids.
