We’re giving delicious pasta salad a vegan update with this tasty, gluten-free recipe that features the divine avocado along with our Ellyndale® Extra Virgin Olive Oil and Gluten-Free Organic Quinoa Penne Pasta. We keep this chilled dish fresh and flavorful with grapes, cucumber, parsley, red pepper and more. Best of all, unlike most gluten-free pastas, ours doesn’t break apart or clump together when chilled, so you can enjoy this delicious dish the next day too!
Ingredients

parsley

lemon juice

Agave Nectar, Amber & Organic

mustard
1 teaspoon
salt
½ teaspoon
black pepper

cucumber, medium chop
½ cup
mozzarella balls, pearled
¼ cup
feta cheese
¼ cup
olives, sliced
¼ cup
cherry tomatoes
8 slices
salami, nitrite free
Directions
- In a food processor combine parsley, oregano, basil, lemon juice, agave nectar, mustard, salt, and black pepper.
- Slowly drizzle in the extra virgin olive oil until Italian dressing has formed.
- Combine with pasta, cucumber, mozzarella, feta, olives, cherry tomatoes, and salami.
- Serve chilled and enjoy!
