This sweet and sassy concoction is sure to make you smile when you pull it out of the office fridge for lunch. Our friends at Meal Prep on Fleek came up with this recipe that marries our easy to prep Living NOW Organic Quinoa with sweet potatoes, berries, and your favorite nut butter. Simply bake a bunch of sweet potatoes on Sunday along with our organic Quinoa to divide up for the weekdays ahead in your go-to meal-prep containers! You can also enjoy for breakfast or even a quick dinner.
Ingredients
2 medium
baked sweet potatoes, prepared
1 cup cooked
Quinoa Whole Grain, Organic
3 tablespoons
almond butter
⅓ cup
mixed berries
Directions
- Open your sweet potatoes and evenly divide the Organic Quinoa between them. (Optional: if you'd like your quinoa a bit sweeter you can toss it with 1 teaspoon of NOW Manuka Honey).
- Drizzle with almond butter and top with berries.
