- Cook farro according to package directions. Transfer to a large mixing bowl.
- Preheat oven to 400ºF and line a baking sheet with parchment paper. Toss butternut squash in olive oil, salt, and pepper. Pour onto baking sheet and bake for 18-20 minutes or until tender and lightly browned around edges. Remove from oven and set aside to cook for 5 minutes.
