Sweet & Spicy Cucumber Jalapeño Mocktail

This sweet and spicy mocktail is the perfect refresher on extra hot days. Grab your favorite ginger beer and add a little monk fruit sweetener to get the sweetness going and then add the rest of the flavors including spicy chili powder and jalapeno to create a mocktail that’s sure to impress! Serve in a mule glass for extra fun at a family picnic or add a little of your favorite adult beverage to make a memorable book-club cocktail!

Ingredients
For the Mocktail:
1 teaspoon salt
½ teaspoon chili powder
1 lime wedge
1 cup chopped cucumber
¼ cup chopped jalapeño
½ cup lime juice
1 cup ginger beer

For the Garnish:
Sliced jalapeño

Directions
  1. On a small plate, combine 1 tablespoon Organic Monk Fruit 1:1 Sugar Replacement, salt, and chili powder.
  2. Use lime wedge to wet rim of your serving glasses. Dip rims into "sugar" mixture and set aside.
  3. Into a blender, combine cucumber, jalapeño, remaining Organic Monk Fruit 1:1 Sugar Replacement, and lime juice. Blend until smooth.
  4. Strain juice into a pitcher. Add ice and garnishes to prepared glasses. Fill ¾ full with juice, and top with ginger beer.
 
Chef’s Tips:
  • For a less spicy mocktail, remove seeds from jalapeño and only use half (about 2 tablespoons). Instead of ginger beer, use plain seltzer.

  • Transform into a cocktail by mixing tequila with juice after straining.
  • Make into a slushy by blending strained juice with ice. Add into cups and mix in ginger beer.
