unsweetened vanilla almond milk

pure vanilla extract

Collagen Peptides Powder
1 tablespoon
Coconut Flour, Organic
1 tablespoon
ground flax seed
1 tablespoon
Monk Fruit with Erythritol, Organic Powder
1 teaspoon
orange zest
1 teaspoon
pumpkin pie spice
1 teaspoon
ground cinnamon
½ teaspoon
baking powder
¼ teaspoon
sea salt
4 teaspoons
ghee, for serving

Cinnamon Pecans
⅓ cup
raw pecans, chopped
½ tablespoon
Liquid Coconut Cooking Oil, Organic
1 teaspoon
Monk Fruit with Erythritol, Organic Powder
¼ teaspoon
ground cinnamon

Directions
Prepare Waffles
- In a large bowl, whisk together eggs, pumpkin puree, and coconut oil. Whisk in almond milk and vanilla.
- To wet ingredients, add almond flour, collagen, coconut flour, monk fruit, flaxseed, orange zest, pumpkin pie spice, cinnamon, baking powder, and salt. Whisk until dry ingredients are incorporated.
- Preheat a waffle maker and grease with additional coconut oil. Cook waffles according to manufacturer’s directions.
Prepare Pecans
- In a small bowl, whisk together coconut oil, monk fruit and cinnamon. Add pecans and stir to coat.
- Transfer to a small pan over low heat and cook for 6 to 7 minutes, stirring every minute to prevent burning. Season with salt.
To serve, spread waffles with ghee and sprinkle with pecans.
