Ingredients
1 cup
Gluten-free Pancake Mix
1 tablespoon
Monk Fruit with Erythritol, Organic Powder
1 teaspoon
cinnamon
1 cup
rice milk
2
ripe bananas, mashed
1
egg, beaten
2 tablespoons + 4 teaspoons (melted)
Virgin Coconut Oil in Glass Jar, Organic
4 teaspoons
Maple Syrup, Organic Grade A Amber Color
Directions
- In a bowl combine pancake mix, sugar, and cinnamon.
- In a separate bowl combine rice milk, bananas, egg, and coconut oil.
- Whisk in the wet ingredients with the dry ingredients until fully incorporated.
- In a sauté pan place 1 teaspoon NOW® Virgin Coconut Oil on medium heat.
- Add ¼ cup of batter into the pan.
- Cook on both sides until lightly browned.
- Top with 1 teaspoon of NOW® Grade A Maple Syrup and serve.
