Ingredients
1 cup Gluten-free Pancake Mix
1 teaspoon cinnamon
1 cup rice milk
2 ripe bananas, mashed
1 egg, beaten
2 tablespoons + 4 teaspoons (melted) Virgin Coconut Oil in Glass Jar, Organic
Directions
  1. In a bowl combine pancake mix, sugar, and cinnamon.
  2. In a separate bowl combine rice milk, bananas, egg, and coconut oil.
  3. Whisk in the wet ingredients with the dry ingredients until fully incorporated.
  4. In a sauté pan place 1 teaspoon NOW® Virgin Coconut Oil on medium heat.
  5. Add ¼ cup of batter into the pan.
  6. Cook on both sides until lightly browned.
  7. Top with 1 teaspoon of NOW® Grade A Maple Syrup and serve.
