Pre-Workout Recipe – Protein-Packed Lemon Pecan Pancakes

Brooks Beast Marta Pen Freitas is a seven-time Portuguese National Champion and two-time Olympian (2016 and 2020) in the 1500 meter. With her eye on representing Portugal at the 2024 Summer Games for the third time, Marta shares her go-to pre-workout fuel – Protein Packed Lemon Pecan Pancakes.

Ingredients
1 cup flour
2 teaspoons baking powder
2 tablespoons sugar
½ teaspoon salt
1 cup milk
2 tablespoons unsalted butter, melted
1 large egg
Toppings:
lemon
yogurt
brown sugar
Directions
  1. Sift the dry ingredients together.
  2. Make a well, then add the wet ingredients. Stir to combine.
  3. Scoop the batter onto a hot griddle or pan.
  4. Cook for two to three minutes, then flip.
  5. Continue cooking until brown on both sides.

Add toppings and enjoy!
