Ingredients
1 pound 92% lean ground beef
1 cup chopped green bell pepper
½ cup chopped yellow onion
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
4 ounces tomato sauce
2 tablespoon Worcestershire sauce
2 ½ cups beef stock
¼ cup low-fat milk
½ cup low-fat Greek yogurt
2 cups freshly grated cheddar cheese
Directions
  1. Heat ground beef over medium heat in a large skillet. Break up into small pieces and cook for 3 minutes, stirring occasionally. 
  2. Add bell pepper, onion, garlic, salt and pepper. Continue to cook for 7 minutes longer. 
  3. Stir in tomato sauce, mustard, Worcestershire sauce, and beef stock. Bring to a boil. Add cauliflower macaroni and cook for 7 minutes, stirring every couple of minutes for even cooking.
  4. Stir in milk and Greek yogurt. Stir in grated cheese and cook 1 minute longer or until cheese is melted. Serve hot.
