-
Line an 8 x 8-inch pan with parchment paper. Spray parchment paper with nonstick cooking spray. Preheat oven to 350 degrees.
-
In a large pan over medium heat, toast pecans 5 minutes, stirring frequently. Remove pan from stove, and let cool. Once cool, roughly chop and set aside.
-
Into a food processor, pulse graham cracker crumbs with ½ cup of melted butter until combined. Add crust mixture to prepared pan. Using your hands or the bottom of a cup, press crust down evenly. Bake 10 minutes.
-
Meanwhile, in a large bowl, combine flaxseed with water. Set aside 5 minutes to thicken.
-
Into a medium bowl, combine flour, cocoa powder, baking powder, and salt. Set aside.
-
Into large bowl with flaxseed mixture, add vanilla and sugar. Whisk to combine. Add dry ingredients and mix until just combined (without overmixing). Gently fold in ½ of chopped pecans and 1 cup of marshmallows.
-
Spread mixture on top of crust. Top with remaining pecans and marshmallows. Bake 30 minutes, remove from oven, and let cool 30 minutes. Cut into squares and serve.
Editor’s Tips
-
Toasting the raw pecans brings out aromatic oils, adding more flavor. It also makes for a crunchier texture.
-
The baked marshmallows become sticky, so it’s important to spray the parchment paper to help prevent sticking.
-
The bars will be gooey right out of the oven, so it’s best to allow bars to cool completely before serving.
