“Everything Bagel” Superhero Muffin & Seasoning Mix

Recipe adapted from “Rise & Run: Recipes, Rituals, and Runs to Fuel Your Day” (2021), written by New York Times bestselling authors Shalane Flanagan & Elyse Kopecky.

This variation of the Savory Superhero will seriously remind you of salty-oniony-seed-covered Everything Bagels. They have a crave-worthy bread texture with a tinge of sweetness from grated yam, which contrasts perfectly with the seasoned muffin tops (best part!). Slice in half and serve topped with cream cheese or butter, just like you would a bagel. So good!

Makes 12 Muffins and 3/4 cup Seasoning Mix

Ingredients
1/4 cup + 2 tablespoons Extra Virgin Olive Oil, Organic
1 yellow onion finely chopped (about 1 1/2 cups)
1 1/2 cups whole-wheat flour
4 tablespoons Everything Bagel Seasoning, divided (see recipe below)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt
6 large eggs
1/2 cup plain whole milk yogurt
1 1/2 cup grated sweet potato (yam)
2 tablespoons dried onion flakes
2 teaspoons flaked or coarse sea salt
Directions

Muffin Directions:

  1. Position a rack in the center of the oven. Preheat the oven to 350°F. Line a 12-cup non-stick muffin tin with large paper muffin cups.
  2. Heat 2 tablespoons of the oil in a skillet over medium-high heat. Add the onion and a pinch of salt and sauté, stirring occasionally, until softened, 5 minutes. Set aside to cool.
  3. In a medium bowl, combine the flour, oats, almond flour or meal, 2 tablespoons of the Everything Bagel Seasoning, baking powder, baking soda, and salt.
  4. In a separate large bowl, thoroughly whisk the eggs, yogurt, and remaining 1/4 cup of olive oil. Stir in the sweet potato. Add dry ingredients to egg mixture and stir until combined. Stir in the cooked onions.
  5. Spoon the batter into the muffins cups, filling to just above the brim. Sprinkle the remaining 2 tablespoons of Everything Bagel Seasoning on top of each muffin and slightly press it into the batter. Bake until the muffins are light brown on top and a knife in the middle comes out clean, 30 to 35 minutes.
  6. Transfer muffins to a cooling rack or cool in the muffin tin. Serve warm or cool completely prior to storing. Store leftover muffins in an airtight container in the fridge or freezer. Reheat in the oven at 300°F for 10 minutes or microwave on low power.

Nut Allergy? You can substitute an additional 1/2 cup of whole wheat flour for the almond flour and increase the olive oil to 1/3 cup. The muffins will be slightly denser but still delicious.

 

Seasoning Mix Directions:

Traditional “everything bagel” seasoning is made from a combination of poppy seeds and sesame seeds. We’ve upped the ante by making our mix with our favorite omega-3 rich seeds including hemp, flax, and chia seeds.

  1. In a small glass jar, combine the seeds, onion flakes, and salt.
  2. Cover with a lid and shake.
  3. Store in the pantry for up to 1 month or in the fridge for up to 6 months.
