Chocolate-Dipped Caramel Peanut Butter Oat Bites

Stock these protein-packed, sugar-free treats in your kitchen weekly for a healthy snack that’s sure to satisfy a sweet tooth. It’s the ultimate meal prep snack made without any added table sugar in sight! It’s scrumptious peanut butter, healthy oats, and more for a sweet treat you can grab all day long, from breakfast on the go to impromptu snacks at midnight.

Ingredients
1 cup peanut butter
⅔ cup mini vegan chocolate chips, divided
¼ teaspoon ground cinnamon
¼ teaspoon flaky salt
Directions
  1. Line a baking sheet with parchment paper and set aside.

  2. In a large bowl, combine peanut butter, Caramel Monk Fruit Liquid Sweetener, ⅓ cup mini chocolate chips, coconut flakes, oats, cinnamon, and salt.

  3. Using a tablespoon, divide mixture and roll into balls. Place on prepared baking sheet, and freeze for 30 minutes.

  4. In a medium microwave safe bowl, combine remaining chocolate chips and coconut oil. Microwave in 15 seconds intervals, stirring in between, until melted.

  5. Dip half of each ball in melted chocolate. Place back on baking sheet and freeze for 10 minutes, or until chocolate sets.

  6. Serve immediately or store leftovers in a sealed container in the fridge.

 

Chef’s Tips:
  • Use a 1 tablespoon scooper for perfect, uniform bites.

  • Load these up with even more protein by adding chia seeds and hemp seeds.

  • These bite-sized treats were made for customizing. Mix in pretzels or nuts for an added touch of crunch and salt.
