Chocolate-Dipped Caramel Peanut Butter Oat Bites

Line a baking sheet with parchment paper and set aside.

In a large bowl, combine peanut butter, Caramel Monk Fruit Liquid Sweetener, ⅓ cup mini chocolate chips, coconut flakes, oats, cinnamon, and salt.

Using a tablespoon, divide mixture and roll into balls. Place on prepared baking sheet, and freeze for 30 minutes.

In a medium microwave safe bowl, combine remaining chocolate chips and coconut oil. Microwave in 15 seconds intervals, stirring in between, until melted.

Dip half of each ball in melted chocolate. Place back on baking sheet and freeze for 10 minutes, or until chocolate sets.

Serve immediately or store leftovers in a sealed container in the fridge.
