Ingredients
½ cup cashew butter
½ cup butter, softened
2 eggs
2 tablespoons Beef Gelatin Powder
2 tablespoons Cocoa Powder, Organic
½ teaspoon baking soda
Directions
  1. Preheat the oven to 325F and line 2 baking sheets with parchment paper.
  2. In a bowl combine almond flour, gelatin, cocoa powder, and baking soda.
  3. In a stand mixer, cream butter with cashew butter and Organic Monk Fruit Sweetener.
  4. Once mixture is fully combined, add eggs, peppermint cookie stevia, and vanilla monk fruit.
  5. Add dry ingredients and combine until dough is formed.
  6. Roll into 1 inch balls, flatten, and place on lined sheet pan 1 inch apart.
  7. Bake 10-12 minutes or until cookies are fully cooked.
  8. Cool for 10 minutes and serve.
