These gluten-free muffins are perfectly seasoned with garlic and a hint of salt, making them an ideal accompaniment to any meal or a satisfying snack on their own. Fresh from the oven, they offer a warm, cheesy goodness that's just as nutritious as it is delicious. 

Ingredients
½ teaspoon garlic powder
1 teaspoon salt
1 teaspoon baking powder
½ teaspoon baking soda
2 large eggs
2 tablespoons Buttermilk Powder
½ cup water
1 ½ cups freshly grated sharp cheddar cheese
2 tablespoons minced chives
Directions
  1. Preheat oven to 350ºF and line 10 muffin tins with paper liners and mist with cooking spray. Whisk together water and buttermilk powder until smooth. 

  2. Whisk together almond flour, tapioca flour, garlic powder, salt, baking powder, and baking soda in a large mixing bowl. 

  3. Whisk in buttermilk, eggs, and oil. Fold in 1 cup of cheddar cheese and chives. 

  4. Divide batter between muffin tins and sprinkle with remaining ½ cup of shredded cheddar cheese. 

  5. Bake for 25 minutes. Cool muffins in muffin tin for 30 minutes before enjoying.
