This light, refreshing salad features a unique combination of Granny Smith apples and salted caramel almonds for sweet-and-tart flavor notes that perfectly complement each other. Ingredients
1 Granny Smith Apple, thinly sliced
1 fennel bulb, thinly sliced
2 celery stalks, thinly sliced
2 tablespoons fresh lemon juice
2 tablespoons olive oil
1 teaspoon fresh dill
1 teaspoon fennel fronds
¼ teaspoon salt
¼ teaspoon pepper
Directions
  1. In a large bowl, combine apple, fennel, and celery.

  2. In a small bowl, whisk together lemon juice, oil, maple syrup, dill, and fennel fronds. Add to large bowl and toss to mix.

  3. Top with NOW Real Food® Salted Caramel Almonds.

 

Chef’s Tips:
  • To bring out the sweetness of the almonds even more, toast them on the stovetop for 1 to 2 minutes on medium-low heat.

  • Have leftovers? Safe for later in the fridge. This salad keeps pretty well!

  • While whole almonds impart a nice crunch, you can choose to roughly chop your almonds into smaller pieces.
