Air Fryer General Tso’s Chicken

Looking for a healthier alternative to your family’s favorite Chinese takeout? Try our version of General Tso’s Chicken! It’s an easy weeknight or weekend meal that comes out of the air fryer extra crispy. The chicken is coated in a crispy cornstarch mixture and air fried until golden brown. It is then tossed in a sweet and savory sauce made with soy sauce, rice vinegar, allulose, ginger, garlic, and chili flakes. This delicious dish is also packed with nutrients, thanks to the ginger, garlic, and broccoli.

Ingredients
For Chicken
1 pound cubed boneless skinless chicken breast
1 large egg
1 tablespoon low sodium soy sauce or coconut aminos
¼ cup cornstarch
1 tablespoon toasted sesame seeds, for serving
2 tablespoons chopped green onion
Cooking oil spray

For General Tso’s Sauce
½ cup chicken stock
¼ cup cup low sodium soy sauce or coconut aminos
2 tablespoons rice vinegar
2 teaspoons ginger, peeled and grated
1 teaspoon minced garlic
¼ teaspoon chili flakes
1 teaspoon cornstarch

Directions
  1. Whisk together egg, soy sauce and organic allulose in a medium bowl. Add chicken and stir to coat. Marinate for 30 minutes at room temperature.
  2. Drain and discard marinade from chicken. Grease the basket of air fryer with cooking oil. Dip each piece of chicken in cornstarch in a shallow bowl. Place into air fryer leaving space between each piece for air to circulate. Work in batches depending on the size of your air fryer.
  3. Air fry for 12-15 minutes at 400ºF, turning chicken with tongs after 8 minutes.
  4. While chicken cooks, whisk together ingredients for sauce in a small bowl or measuring cup. Transfer to a saucepan and bring to a simmer over medium-low heat. Simmer for 3-4 minutes, until thickened.
  5. Transfer hot chicken to a mixing bowl and toss with warm sauce to coat. Garnish with sesame seeds and green onion. Enjoy hot served with rice and steamed broccoli.
