Pumpkin Spice Bliss Balls

If it was up to us, pumpkin spice season would be all year long. Our pumpkin spice flavored monk fruit sweetener has all the anticipated fall flavor without any of the sugar! While you can use a few drops in your coffee, we prefer to go all out and meal prep these pumpkin spice bliss balls for a drool-inducing snack we like to grab in the fall, winter, spring, and summer.

Ingredients
15 Medjool dates
1 cup quick oats
¼ cup pumpkin purée
1 teaspoon vanilla extract
½ teaspoon cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon salt
Directions
  1. In a high-speed blender or food processor, blend all ingredients except shredded coconut until a sticky mixture forms.
  2. Using your hands, roll into 1½-inch balls. Roll into shredded coconut. Enjoy immediately, or store in refrigerator for later.
