Organic Vanilla Millet Muffin

Easy to make but really hard to stop eating! We use cooked millet as the basis for these hearty and satisfying muffins, made with a few simple ingredients including vanilla extract, Turbinado sugar, and our Coconut Cooking Oil. These muffins are a welcome change in flavor and texture from traditional muffins.

Ingredients
1 egg
½ teaspoon vanilla extract
1 ½ cups Millet, Organic
⅓ cup
1 teaspoon baking powder
Directions
  1. Preheat oven to 350°F and lightly grease a muffin tin.
  2. In a bowl, combine egg, Coconut Cooking Oil, and vanilla extract.
  3. In a blender on medium speed, combine cooked millet, organic turbinado sugar, and baking powder.
  4. Slowly pour egg mixture into the blender with the millet mixture.
  5. Blend until all the liquid is fully incorporated and a smooth batter has formed.
  6. Scoop batter into prepared muffin tin and bake in preheated oven for 30 minutes, until lightly browned.
  7. Remove to a rack and cool for 10 minutes.
  8. Serve warm and enjoy!
