No-bake peanut butter oatmeal cookies are a delicious, easy-to-make dessert. The cookies are made with a simple blend of rolled oats, peanut butter, BetterStevia® Organic Liquid, coconut oil, maple syrup, and salt. Oats are a good source of fiber, and peanut butter is a good source of protein and healthy fat. The cookies are sweetened with BetterStevia® Organic Liquid, which is a popular white sugar alternative that is low in calories. They make a great breakfast alternative when on the go!

Ingredients
¾ cup creamy natural peanut butter, at room temperature
⅛ teaspoon salt
Directions
  1. Stir together oats and salt in a mixing bowl. Set aside.
  2. In a separate medium mixing bowl, stir together peanut butter, BetterStevia® Organic Liquid, coconut oil and maple syrup until smooth.
  3. Stir oats into peanut butter mixture until fully combined and moist. Mixture should hold together when squeezed.
  4. Form 2 tablespoon amounts of dough into cookies and place on a parchment paper lined baking sheet.
  5. Refrigerate for 30 minutes, or until cookies are firm.
