Healthy Low Sugar Lemon Bars

Preheat oven to 325ºF and line a 9x9 square baking pan with parchment paper overlapping all sides. In a medium mixing bowl, combine almond flour, Allulose sweetener, salt, vanilla, and softened butter. Use a fork to mix, forming a moist dough. Press dough evenly into baking pan covering the entire bottom. Bake for 18-22 minutes, until edges are lightly browned.

While crust is baking, whisk together Allulose sweetener, Stevia powder and cornstarch in a large mixing bowl. Whisk in eggs followed by lemon zest and lemon juice.

Remove crust from oven and immediately pour lemon filling on top. Return to oven for 25 minutes, or until the center of filling is just set.

Remove from oven and cool in pan at room temperature for 1 hour. Filling will continue to firm as it cools. Transfer to refrigerator to chill for 2 hours.

Lift bars out of pan using parchment paper and dust with confectioners’ sugar. Slice into 9 bars. Store in refrigerator up to 1 weeks.
