Chewy Coconut Granola Bars

Makes 10 to 12 servings

Perfect for breakfast on-the-go or a quick snack, these moist and chewy granola bars can be customized with any combination of nuts, seeds and dried fruit.

Ingredients
3/4 cup unsweetened applesauce
2 teaspoons vanilla extract
1/4 cup oat flour (You can quickly make oat flour by blending uncooked rolled oats to a fine consistency)
Directions
  1. In a large sauté pan on high heat, toast rolled oats.
  2. After 2 minutes, add coconut flakes and in a continuous motion toast the rolled oats and coconut flakes.
  3. Toast until light golden brown.
  4. In a large bowl, stir together cooled toasted oats and coconut, dried apricots, walnuts and oat flour.
  5. In a small bowl, whisk together applesauce, agave nectar, and vanilla extract until evenly blended.
  6. Stir applesauce mixture into oat mixture until combined.
  7. Spread mixture in the prepared baking pan, pressing down until the mixture is compact.
  8. Bake 30 minutes at 325° F or until golden brown.
  9. Cool completely and cut into small rectangular bars.
  10. Store the bars in an airtight container for up to 1 week.
