Candied Citrus Peels

Use a vegetable peeled or paring knife to slice peels off of fruit. Slide knife along the inner peel firmly to remove as much of the white pith as possible. Slice into ¼-½ inch slices.

Add about 2 cups of water to a saucepan or pot and add peels. Bring to a boil and boil for 3-4 minutes. Strain and repeat once more.

Add 2 cups of water and 1½ cups cane sugar to pot. Return peels to pot and bring to a boil. Reduce heat to low and simmer for 40 minutes.

Strain peels and spread on a wire cooling rack over a parchment paper lined baking sheet. Cool for 30 minutes-1 hour, or until mostly dry.

Stir together cane sugar and citric acid in a shallow bowl. Add citrus peels and stir to coat.

Spread on cooling rack and continue to dry at room temperature, about 20 minutes.
