Berry Breakfast Popsicles

Popsicles for breakfast, what?!?! That’s right, our cool veggie friends over at VegNews whipped up this healthy recipe for popsicles that is perfect for on-the-go summer breakfasts. With the sweetness from maple syrup and a little crunch from granola, you’ll want to make a double batch of these stunners for snacking later in the day, too!

Ingredients
1 ¼ cup water
¼ teaspoopoon ground cinnamon
1 cup mixed frozen berries
½ cup granola
Directions
  1. In a pitcher, combine water, oat milk powder, and cinnamon. Froth or whisk until smooth.
  2. Add maple syrup and berries, and mix to combine. Pour mixture into popsicle molds, leaving room at the top for granola.
  3. Top with granola, and add popsicle sticks. Freeze overnight. When ready to enjoy, run frozen molds under warm water to loosen.
