This gluten-free treat is made with NOW Real Food® Organic Almond Flour and Tapioca Flour, speckled with raw almonds and antioxidant-rich cacao nibs for a subtle chocolatey touch. Whether enjoyed alone or shared, these biscotti offer a satisfying snap with every bite, making them a wholesome, sophisticated snack. 

Ingredients
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 large egg
1 large egg white
1 teaspoon almond extract
¼ cup chopped Almonds, Raw & Unsalted
Directions
  1. Preheat oven to 350ºF and line a baking sheet with parchment paper. In a medium mixing bowl, whisk together almond flour, tapioca flour, cane sugar, baking powder, baking soda, and salt. 

  2. Add egg, egg white, coconut oil, and almond extract. Mix well until dough is moistened. Mix in cacao nibs and almonds. 

  3. Transfer dough to baking sheet and use damp hands to form into a 7-inch oval loaf. Bake for 30 minutes. 

  4. Remove from oven and cool on baking sheet for 15 minutes. 

  5. Transfer loaf to a cutting board and slice into ½-1-inch slices. 

  6. Place slices of biscotti flat on baking sheet and bake for 20 minutes longer, flipping biscotti after 10 minutes. 

  7. Cool for 30 minutes before enjoying.
